Ingredients:

- 3/4 cup grated carrots (about 1 large carrot)

- 1/4 cup all-purpose flour

- 1/4 cup nut flour

- 1/2 cup whole wheat flour

- 1 teaspoon baking powder

- 1/2 teaspoon baking soda

- 1/4 teaspoon salt

- 2 teaspoons cinnamon

- 1/2 teaspoon nutmeg

- 1 large egg

- 1 teaspoon vanilla extract

- 1 cup milk (of choice)

- 3 tablespoons brown sugar

- 2 tablespoons coconut oil or butter (for cooking)

Instructions:

1. Begin by grating the carrot(s) using a box grater or a food processor, then set aside.

2. In a large mixing bowl, combine the all-purpose flour,nut flour ,whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

3. In a separate bowl, whisk together the egg, vanilla extract, milk, and brown sugar until well combined.

4. Stir the grated carrots into the liquid mixture.

5. Pour the liquid ingredients into the dry ingredients and stir until just combined, being careful not to overmix.

6. Heat up 1 tablespoon of coconut oil or butter in a bunny skillet make sure you have a regular skillet as well non-stick frying pan or skillet over medium heat.

7. Once the pan is hot, ladle about 1/4 cup of the pancake batter into the pan for each pancake. Next if your using the bunny pan flip the pancake onto the other pan so it cooks through.

8. Cook the pancakes for 2-3 minutes on each side, or until golden brown and cooked through.

9. Transfer the cooked pancakes to a plate and keep warm while you cook the remaining batter, adding more coconut oil or butter to the pan as needed.

10. Serve the Bunny Hop Carrot Cake Pancakes warm with your favorite toppings such as maple syrup, chopped nuts, or whipped cream. Enjoy!
